Where I come from seeing someone is a more serious form of dating. Dating is more of first impression kinds. If u like the first impression then it results in a friendship and then might lead to more serious form of compatibility searching seeing someone. Probably that's y once broken up, mainraining friendship in such a relationship isn't a priority any longer. I think they are the same so I would use them both.
But I think that maybe other people would say dating when they are more committed and would just say they are seeing them when they are not as committed.

For me there isn't so much a difference between seeing and dating, it's more about dating to get to know someone and then dating exclusively if you see it becoming a long term thing.
